Watermelon Lemonade DIY

Watermelon Lemonade is a summer treat I make for any social gathering. It's always a hit, and takes under 10 minutes to make. All you need are 2 lemons, 1 watermelon, a big pitcher and a can of lemonade and water. Begin by cutting up your watermelon into 2" chunks and tossing them into a blender. Add can of lemonade and water, then blend on the "puree" setting. After all is blended, pour into a pitcher and add 2 sliced lemons into the mix for aesthetic pleasure. Serve in cute little glasses or mason jars, even add sugar to the rims for an additional kick. (*this lemonade can also be made with 2 cups vodka or 2 cups gin for added fun!)

Raw Cooking with Jonsi + Alex

One thing I really treasure about Portland is the amazing variety of foods and diets that most produce sections, fresh food markets and restaurants cater to all year round. Since moving here, I've become part of a CSA group where I get fresh fruits and veggies that have been grown locally, delivered to my house every Tuesday and I always want to put them to good use.
After stumbling upon a raw cookbook by Jonsi + Alex (Sigur Ros // Riceboy Sleeps), I now have an amazing list of dishes to make with all my fresh foods! Below are some of the videos they've created to show you just how easy the food is to make, along with a link to the online recipe book. Enjoy!

THESE DAYS...

Sorry so very much for the absence of posts lately. All is well on this end. I've been very busy enjoying the sunshine and summer in Portland and falling in love. What a whirlwind of good times and changes. I wanted to share a little bit of what I've been up to in a picture diary.. enjoy
Visiting the famous Portland Rose Gardens (in full bloom) and Multnomah Falls, SO PRETTY!!The Oregon coast is my favorite place to escape to on weekends or days off. When we visit we have picnics and build fires, fly kites and get far too much sand in our pants.
Last Thursday was Mr's birthday. I surprised him by renting a boat and we enjoyed boating the Colombia and Willamette Rivers. It was beautiful and Mr was SOOOO happy. We topped the night off with friends, drinks and lots of laughs at one of our favorite bars... good memories!

Homemade Sweet Granola DIY

I love starting my day right with a healthy breakfast, and with all the amazing fruits and berries in season, I decided to make a homemade sweet granola with dried fruit! Here is a fun DIY for your summer days. It's the perfect balance of ease, health and sweetness to jumpstart your morning.
Ingredients:
3 Cups rolled oats
1 Cup brown sugar
1/2 Cup shredded coconut
1/4 Cup maple syrup
1/4 Cup vegetable oil
3/4 teaspoon salt
1/2 Cup dried fruit or berries of choice (handmade or store bought)

Directions:
Preheat oven to 250 degrees (f). In a large bowl combine oats, coconut and brown sugar. In a separate small bowl mix salt, vegetable oil, and maple syrup till cloudy. Next pour the vegetable oil mixture into your large bowl of oats and toss till all oats have been slightly dampened by the oil mixture (i used my hands for this part, it was much easier than a spatula or spoon). Pour your oats into a sheet pan and cook for 1 Hour. After baking, remove granola chunks and loose oats and pour into a bowl with your dried fruit of choice. Stir together with a spoon and serve.
I used apples, rhubarb and strawberries from the Saturday street market in Portland, and dried them especially for my granola. Combined with some almond milk, this is my new favorite snack!!

Corey Arnold is a fisherman turned photographer from Portland, Oregon. I was recently shopping in Dunderdon and spotted one of his pieces on the wall. I love how is on-the-sea lifestyle allows his photos to have true life in them. I'd love to own one of his prints someday.

Style Profile by Miles Langley

Earlier this year, I was blessed by meeting a wonderful group of New Zealand travelers visiting the US for the first time. Out of the group of charming fellows was Miles Langley, a filmmaker based out of London. While in Portland, he asked if he could film a style profile for Seablanket, to which I happily accepted. I love finding vintage eyewear that mimics today's modern trends and styles.
